Poblano Corn Salsa (Bento)

I was craving burrito bowls this week and wanted to make my own vs going to Chipotle. Don’t get me wrong, I’ve had Chipotle more times than I can count and love it there. But today I wanted to make them myself. One of my favorite things is their corn salsa but my son doesn’t like it because “its too spicy”, which is his reason for disliking many foods these days. Making it at home allows me to control the heat so everyone is happy.

I used poblano peppers this time so there was minimal if any heat. It went over well with my son who declared “it was good enough to eat”, ha! I personally thought it was delicious. Feel free to use red onion in this if you prefer, I didn’t have any on hand so yellow worked just fine. If you prefer your salsa spicier, add a jalapeño into the mix and you won’t be disappointed.

This is so easy to make and such a perfect snack for the summer. It goes wonderfully with tortilla chips or as a burrito bowl topping.

Poblano Corn Salsa

This fresh salsa is perfect for a summer snack or as a burrito bowl topping. Easily adjust the spice level to your preference!

Ingredients

  • 2 Cups Corn (canned, fresh or frozen defrosted)
  • 3 Tablespoons Onion minced fine (red or white)
  • 1 Lime
  • 1/2 Poblano Pepper (small dice)
  • 2 Tablespoons Cilantro
  • 3 Tablespoons Olive Oil
  • Salt
  • 1/2 Jalapeño (small dice) (optional)

Instructions

  1. Add all ingredients together in a mixing bowl and toss well until combined thoroughly. Season with salt to taste.
  2. Perfect with tortilla chips, on tacos or in a burrito bowl.
