Salmon “caesar” salad (Bento)

This is our dairy free version of Salmon Caesar Salad. My oldest son has a dairy allergy and I am lactose intolerant so unfortunately we have to forego cheese and all the most delicious dairy products. I developed lactose intolerance later in life so sadly know the joys of cheese and cream (crying). In my quest for a dairy free caesar dressing I have tried many different recipes and this seems to be the easiest and a pretty good replica. Although its not exactly the same, it is still so good and satisfies the craving.

The best part of this dressing is how easy it is and that we always have the ingredients on hand so I never have to make a special trip to the store. With two kids, lately my motto is less is more. Hummus provides a creamy consistency and the fresh garlic gives it a little kick.

When I assemble this salad I love to add pasta and fresh croutons to make it more filling. I’m lazy and use whatever kind of bread type thing I have on hand and toast them up in a pan with some olive oil, salt and garlic powder. Today I used a hot dog bun (because why not).

"Caesar" Dressing with Salmon Salad

This dairy-free Caesar inspired dressing is perfect on greens with fish or chicken.

Ingredients

Caesar Dressing
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Plain or Garlic Hummus
  • 1/2 Lemon Juice
  • 1 Small Garlic Clove (minced fine)
  • Salt and Pepper to taste
Salmon Salad
  • Romaine lettuce
  • Cooked Pasta (penne)
  • Croutons

Instructions

  1. Add all of the dressing ingredients to a bowl and whisk until combined and creamy. If consistency is too thick add more lemon juice or water to thin it out depending on taste preference.
