Chicken Salad with Dill (Bento)
I’m slowly starting to add the recipes from my bento (pack lunch with me) videos here. This week I made a chicken salad sandwich on the most delicious roll. The chicken salad had a hint of dill and went perfect with fresh green leaf lettuce. I like large chunks of chicken in my salad but if you prefer smaller pieces please chop them to your liking. If you have fresh dill (unfortunately I didn’t this day) that would be fantastic also.
Sometimes I crave simple hearty foods that require very little prep. I had some leftover chicken breast in the fridge from dinner the night before so this was easy to throw together. A lot of people ask when I prep the lunch boxes - whenever bread is included I try to do it the morning of so nothing goes stale or get soggy, this seems to work well. You could easily make the chicken salad the night before and just assemble the sandwich the morning of to save on time.

Chicken Salad with Dill
Ingredients
- 1 Large Cooked Chicken Breast (Cubed)
- 2-3 Tablespoons Mayonnaise
- 1/2 Tablespoon Dijon Mustard
- 1 Rib Celery (diced)
- 1 Green Onion (diced)
- 1/2 Teaspoon Dried Dill or 1 Teaspoon of Fresh
- Salt and Pepper to taste
Instructions
- Cut up chicken into bite sized cubes and add to mixing bowl. Add diced celery, green onion, mayonnaise, dijon mustard, fresh or dried dill and salt & pepper to taste. Mix well and serve on a roll with fresh lettuce.
